'Tis the season for soups and stews! And this recipe for Hearty Beef Stew is so easy to make! You're family will love this with a slice of bread and butter. Mmmm.
You will want to have a batch of beef broth made (or you can buy some, I like this brand). You can view my recipe for homemade beef broth here.
2 1/4 pounds stew meat
1/2 pound mushrooms, chopped
1/2 pound carrots, chopped
2 Tablespoons butter, if needed for browning
Approx. 3 pounds potatoes, diced
11 ounces frozen green beans (or fresh)
2 quarts beef broth (reserve 2 cups for use at the end)
1/4 cup cornstarch or arrowroot powder
salt, to taste
Brown your stew meat in a big dutch-oven type pan. I only use stainless steel, cast iron, or enameled cast iron.
Next, add the chopped mushrooms and carrots, and brown. I added 2 tablespoons of butter, since my meat was pretty lean and didn't render any fat. Mushroom note: I used baby portabellos and they were good. White mushrooms are good, too.
When these items are sufficiently browned, add the diced potatoes and chopped green beans.
Add 1 1/2 quarts beef broth and salt (I use this brand). This was enough to almost cover the contents of the pan. Bring to a boil and then simmer (not the lowest heat setting, but low and lightly bubbling) for 2 hours.
Whisk 1/4 cup cornstarch (you could use arrowroot powder instead) with the 2 cups reserved beef broth. This broth needs to be cold to mix properly. Pour the mixture into the stew. This will give it that distinctive thick broth. Bring the stew back to a boil, then taste and adjust seasoning. I used 3 1/2 teaspoons salt all together, but it was coarse salt. If you're using finer salt, you generally use less.
And that's it! I told you it was easy! Most of this cook time is unattended. I love meals like this that are all in one pot and don't require preparation right up to dinnertime. That way I can relax a bit before dinner.
