Here are a few of my notes:

-The cells that line the gut only live a few days, so healing can be achieved.  The key is to stop putting irritants into the body and start feeding it nourishing things, so that your body can produce healthy, new cells.

-Eating a little sauerkraut everyday gives you billions of beneficial probiotics!

-Sauerkraut has 20 times more vitamin C than fresh cabbage!  It's the beneficial bacteria that start to digest the cabbage and produce the vitamin C for us!

-When starting ferments and probiotics, go slowly because your body will start to flush toxins that can make you feel worse before you feel better.
