Here is my version -
1 cup plain, whole milk yogurt
1/2 very ripe banana, mashed
1/4 cup rolled oats (not quick)
2 tablespoons ground almonds (I ground some up in my Cuisinart and keep them in a jar for this recipe)
1 tablespoon chia seeds
honey, to taste - I probably drizzle in about a tablespoon
I stir all this together in a bowl and then scoop into the jar. Do this the night before and let it sit overnight in the fridge.
It tastes great! It thickens up to a greek yogurt-like consistency. I am fairly new to chia seeds and really wasn't sure if I would like this, but I do. I don't taste the chia.
It's very handy for busy mornings, when you're short on time. Just grab and go.
A lot of the recipes call for greek yogurt, but they also call for a liquid. Greek yogurt is just regular yogurt that has had the whey drained out of it. So I figured I could just use my regular yogurt and omit any additional liquid called for in the recipe.
Instead of using banana, you can try a variety of fruits. You may have to adjust the sweetener a bit. Bananas are sweeter than most fruit. I heard of a lady that uses raisins in her recipe and doesn't need a sweetener. You could also try a few drops of stevia instead of honey.
